Bok Choy Success


We are part of a food co-op which has been a wee bit of an adventure because it introduces us to foods we would not necessarily eat. The Lastest Example: Bok Choy. What in the heck is bok choy? And how in the world do you prepare it? After doing some research we learned it is like a Chinese cabbage. Since we received 2 of them we have been able to try multiple dishes. Our first try we sauteed it with onions and soy sauce and it was edible. But tonight we pulled out all the stops to go beyond edible to pretty dang good. We tried Pumpkin Pasta with Bok Choy, Ham, and Pecans. We had to make our own pumpkin pasta and it turns out I am not strong enough to manhandle the rolling pin. I could not get the dough flat enough fast enough so I had to call in the big guns. Steve can do it all ladies! Moral of the story is while the noodles were not perfectly cut they tasted great and we have gained a new skill. As for the rest of the dinner it was pretty impressive, too. If you are looking for an unusual vegetable to try, we highly recommend the bok choy.
